Inspire: Me Healthy

This is my Second link-up of all time!

Today I am linking up with Kristen from All In My Twenties and Raven from Don't Quote the Raven, I have been a fan of these two ladies for a while now and being that I am fan of all things skinny Healthy I thought maybe I'll jump on this train!

Growing up I was blessed with a kick ass metabolism which enabled me to eat just about whatever I wanted without having to do one bit of exercise. Well that song and dance was over when I was introduced to Mr. AL-CO-HOL and Mrs. College. Nine years later I am still a college student and very well acquainted with my good pal Al-co-hol, needless to say I have decided that I need to get just plain healthy. 

ALLOW ME TO INTRODUCE THE NEW ME,


MEATLESS MEG! 

That's right I have decided to give up meat. I am on day four and I am doing okay. I haven't craved my go-to meal of chicken fingers or the ever so delicious Wendy's cheeseburger yet, however I feel like after a few cocktails one night my self discipline will be tested. Until then I am in it to win it... I mean I WILL NOT EAT  MEAT NO MATTER WHAT. So while changing up my diet I have also decided to have a weekly weigh in (with pictures) and to keep a food/exercise/weight journal. Which has been awesome with the help of my new Meal Planner Notebook from May Books

This guy is pretty awesome and Affordable!

So here are my stats:

Week 1
Weight: 124.4
Exercise: 5 miles of bridge running.
Meals: No meat... I have a recipe that I will post at the bottom for awesome Veggie Enchiladas.

So there we have it.... hoping with the help of Inspire: Me Healthy I will really get my butt in gear!

This week I made Veggie Enchiladas, they were delicious!

  1. I tried giving up meat last year! And yeah, I would do great, but after a few drinks in my system I'd so easily be like eff this! haha. But I think that's so awesome that you're giving it up! I've thought of trying it again, so maybe this'll motivate me :)

  2. I have considered giving up meat too but I am a pathetic weakling especially when my husband and kid wouldn't ever consider joining me in quitting.... not in a million years. Looking forward to seeing how you do though! Good luck :)
